Sunchoke Soup


My nutritionist has said a few times I need to incorporate Jerusalem Artichokes aka Sunchokes into my diet because they are a great source of inulin, a powerful prebiotic, which aids in gut health.


Prebiotics are necessary to feed the probiotics in our gut, without adequate prebiotics in our gut, probiotics can not thrive and do their job adequately.


I had looked for them in several grocery stores around town and talked to someone else that had been on the hunt for them as well and neither one of us were able to find them.


Then, the other day I was perusing Market Wagon, and there they were!!! Their is a farm not too far from where I live that raises Sunchokes!! ( Click HERE and if you're new to Market Wagon, friend me, once I accept we both get $20 off on our next order!).


They look like ginger, and can be very dirty, lots of mud in crevices. I like to chop them up and then rinse them really well. If you rinse first it still doesn't get everything out typically, at least not from the ones I've bought.


No need to peel them if they are fresh, the skin is very thin.
