This recipe was inspired by a creation of Chef Nik at Ripple & Co, a local restaurant owned by one of our dear friends. His wonderful rendition was served over rice and had black beans and a spicy sausage in it. All things I should not be eating based on my genetics and medical history. I skipped the rice, picked around the black beans (ok, most of them anyway) and just ate the sausage and loved everything about it.
Then, I went straight home and tried to recreate it so that it fit my dietary specifications, and this is what I came up with! None of my friends even got to sample this one because Rod and I ate it all in one sitting.
Serving Suggestions
Throw in some spicy sausage, smoke sausage, chicken, beans, a sprinkle of cinnamon, a little parmesean or a sprinkle of fresh parsley. This is a super versatile recipe that can go all sorts of directions!
