Rutabaga


I've been trying to incorporate different veggies lately in an attempt to broaden my horizons and nutrients consumed.


I've had rutabaga in the past, but it's been years. I don't know why I haven't made it again, it's one of those things, when it's unfamiliar it's easy to forget about I suppose.


This was delicious though! The flavor tastes more like potato the more you cook the rutabaga.


Also, so simple to prepare and didn't take long at all.


I cooked these in the air fryer, but you could roast them in the oven too, especially if you were doing a lot of them for a group or meal prep.


Sometimes you just need something a little different to switch things up. I don't think of these as potatoes, because I'd be disappointed. I just think of them as another veggie option that I can have a little bit of, and that keeps me happy.


While rutabaga's are a higher carb option, they have lots of beneficial nutrients! I can eat them and stay in ketosis as long as I don't over do it. These aren't something I will eat on a regular basis, but they are yummy every now and then!


I do 40 carbs a day and I can easily work them in, but if you are trying to stay under 20 carbs a day, these probably aren't for you.
