I love chia seed pudding because you can flavor it so many different ways and it's a great dessert!
Sometimes I eat it for breakfast, but I generally try to save it for later in the day in case I get a little bit of a craving for something sweet, rather than starting my day with something sweet.
Since pomegranates are in season I've been using them every way I can think of!
For years I didn't mess with them because I didn't really know how to deseed them and it was tedious. But, I've finally gotten the hang of it and it doesn't take long at all.
Pomegranates are a great source of fiber, vitamins C and K, folate, potassium, as well as being a potent antioxidant. Check out this article at Healthline about pomegranates!
Not to mention the health benefits of chia seeds and blueberries! This is an extremely healthy way to curb a craving!
Feel free to sub out the fruit, here is a photo of my Triple Berry Chia Pudding!
Triple Berry Chia Pudding Modifications:
Just sub out Kirkland’s Organic Frozen Triple Berry Blend for the pomegranate and blueberry in the original recipe. Set out for about 30 minutes to thaw, I used my dough cutter on the berries to chop them up but not pulverize them, makes it super easy and you don’t have to dirty your hands. Other than that follow the original recipe!
