Pastured Sausage & Veggie Skillet

This is an easy dinner that I just threw together the other night, trying to use up veggies in the fridge before my Misfit order came in.


I wanted fast and easy, it had been a long day. Honestly, I was so tired I wasn't even going to take a picture but Rodney started eating before me and said it was really good and why wasn't I taking a picture...so, I snapped a few real quick so I could sit down and eat.


You could use any veggies that you have on hand that need used up too!


I had picked up some organic frozen cauliflower to try at Costco when I was there the other day. When I tried it years ago I really didn't like the texture, and maybe it was how I cooked it that was the problem. So, I figured I'd give it a go again. It isn't quite the same as fresh, but it was still pretty good, I made it just like I do my fresh. For some tips on how to not get mushy cauliflower rice check out my Cauliflower Rice post.


Garnish with a big handful of fresh chopped parsley and some avocado and enjoy!
