I had started my long term chemo pills the week prior and had really bad nausea over the weekend so I didn't get any food prepped for the week. So, I had to come up with something quick on my lunch break! We were eating in about 25 minutes from the start time, also my kind of recipe.
When I'm ready to eat I'm not too interested in waiting, I have a really bad habit of snacking while cooking and then still eating a full meal. I don't like long drawn out dishes to prepare when I'm ready to eat.
I had some Cauliflower Fauxtatoes leftover in the fridge, so I had it on that with a side of steamed broccoli. Cauliflower Rice would be good, zoodles, or palm noodles too!
