Mash bowls are so versatile, use whatever veggies you have on hand. Make a variety and do different combos for a meal prep day. That way you don't get bored as easily with it and you get everything prepped at once. Maybe make an extra batch of Cauliflower Fauxtatoes for a side dish to go with fish and veggies one evening. Always be thinking ahead, it'll save you time and money. And, being prepared is key to stay on track, that means having at least some food made up, ready to go so when you're tired and hungry you don't go get junk.

Serving Suggestions
Add fish, chicken, bacon, sausage, ground beef, liver, lamb whatever your preferences are for protein.
Drizzle with olive oil or add avocado for some healthy fat.
Add an over easy egg.
Grated cheese, a sharp cheddar or parmesean would be good, or even a little goat cheese!
