Sauces can really make a meal. They can add so much flavor, but also really good, healthy fat if you are making your sauces with a high quality avocado oil or olive oil.
And, they are so simple to make! It's silly not to keep a sauce on hand all the time!
I make this in a large mason jar so there aren't any dishes to clean up, whatever we don't use I just pop a lid on it and throw it in the fridge.
To start you need to make sure to leave your egg setting out for 10-15 minutes, preferably in the lime juice, as long as you do this you should never run into a problem getting your sauce to emulsify and thicken up.
After that time has passed, throw in your garlic, salt and oil and blend, then add in your flavor, this time flame roasted green chiles! And blend a little more to incorporate your chiles throughout.
If you don't eat it all, it will last in the fridge for 5-6 days, which gives you ample time to down this yummy sauce.
I love these green chiles!!! Costco carries them, and they are super clean, no preservatives or anything extra or unnecessary. Just a wonderful heat that comes a few seconds after your bite, no burning your mouth and overpowering any other flavor. They are delicious!
It's great on meats, eggs, a little in soup, on top of casserole, be creative with it...and liberal, because it's a big jar. But, we seem to go through it no problem.
