Eggplant Puttanesca


If you are on strict keto this will unfortunately be too high in carbs for you, it's calculating about 25g of net carbs for a serving. But if you are in a place where you can do a little more carbs, this is a great recipe loaded with veggies!


I'm going to make another one lower carb in the near future.


I loved the meatiness of this recipe, no there is no meat in it, but the texture is such that it seems meaty and hearty.


It came together super quick and easy and the leftovers were better than the initial serving, which I personally love because I'm a huge fan of making extra and having it for lunch and maybe another dinner later in the week.


Serving Suggestions


It could be served over zucchini noodles, spaghetti squash, palm pasta, palm rice, cauliflower rice. All sorts of options. The first night I had it with spaghetti squash and didn't care for it, the squash was too sweet. But the leftovers were good on the squash. I also did some leftovers on palm rice and that was really good!


White fish or chicken goes really well for protein and you can always add another side of veggie's if you like!


The recipe nutrition stats also do not take into consideration what type of "pasta" you use, so you will need to calculate that in as well. It also uses the red wine in the calculation, not the balsamic, which has an extra 1-2g of carbs.
