An easy way to get a wide variety of veggies into your diet is salads, but you've got to have some ways of changing things up a bit to prevent boredom.
When I first started trying to follow the Metabolic Approach to Cancer I struggled because, while I was accustomed to making my own dressings, all of my recipes had honey in them and they were not good with out it. I can use monk fruit and stevia, but I could taste them coming through the dressings I made and didn't care for that.
So, I took some time and played with dressings one day, here are a few that utilize different vinegars but no sugars or added sweeteners.
Make your dressings in a wide mouth mason jar (immersion blender won't fit in a regular mouth mason jar), using an immersion blender to mix and then put a plastic lid on it and keep those dishes to a minimum!
You do need to be careful with balsamic vinegars, as they spike glucose levels more than other vinegars. If your goal is to be in ketosis you'll need to see how your body responds to them.
