Cruciferous Pilaf


Hey guys! It's been longer than I like since I've posted a new recipe. Still been cooking, but haven't sat down to put it all together for you guys.


My natural tendency is to go full force and then some, like 110%, when I have something to do. The several years leading up to my cancer diagnosis was a prime example. I wasn't spending time with friends, didn't have much down time, my mind was racing because I had a million things I was doing. I accomplished quite a bit but also set myself up the perfect storm in my body to not be able to handle the stress of a bad accident as well. The more I learn about the terrain theory (more on this soon), the more I'm convinced all of this contributed to my cancer.


So, my goal from here on out is to try to maintain balance. This is a huge learning curve for me, as I don't do chill very well. Especially when I'm excited about something. But, I feel this is a matter of life and death for me. I absolutely must keep stress to a minimum and take to time to read, meditate, spend time in prayer and reading my Bible and just having coffee and chatting with friends.


Anyways, it was getting to the point where every moment was filled and I didn't have any time to just sit down and do nothing between work, cleaning out my mom's apartment and other commitments. So, I took a step back and told myself that all my recipes and photos will be there when I get other things handled.


We absolutely must learn how to say, "No". If you're like me, not just saying no to other people, but saying it to ourselves as well.


This meal took 30 minutes, from start to food in my mouth.


All in one pan.


Easy.
