This recipe is a combination and adaptation of a couple different recipes. I came across a 2 ingredient chocolate fudge recipe by Kirbie over at kirbiecravings.com with really good reviews and was curious about it, you can get that recipe here.
It called for sweetened condensed milk, which I can't do, so I started looking for alternatives and came across this recipe by Megan over at detoxinista.com for a coconut milk sweetened condensed milk, but I can't do honey/sugar/anything that spikes glucose.
I was definitely skeptical about a 2 ingredient fudge to start with because I'm super picky about my fudge, fudge is not easy to make, good fudge is especially not easy to make and I was going to be making a few tweaks. My hopes were not high.
But guys!!!!!!!!!!!!! Holy crap, this stuff is freaking good! And stupid easy to make.
It does take a little time, but it doesn't really take any of your time, you just have to cook the coconut milk down for awhile, but you don't need to watch it after the first five minutes.
The entire pan was nearly devoured in 5 minutes because it was that good, even the teenager loved it. I managed to stash several pieces in the fridge so I would have a treat handy when I want one.
Optional:
Add nuts and large flake sea salt to the top before putting in the fridge!
