A simple meal that comes together pretty quick and is packed full of flavor!
Whatever veggies you have on hand that need used up work great, I had zucchini, yellow squash and onion, but broccoli, brussels sprouts, sauteed spinach, kale or other greens would be great too!
The leftovers are fabulous as well, which is a big win in my book, because you can make extra and have lunches ready to go.
Start off making a batch of Cauliflower Rice and Cilantro Lime Crema.
Then season some chicken, cook it up and saute the veggies you're using and pile it up. So. Good.
