Cheesy Vegan Cauliflower Swiss Chard Casserole

Brainstorming what to do with some of my Misfits Market order this week, I had gotten a little carried away with my greens order, once again. I really needed to use some of them up because they take up so much space, so we tackled the largest first. Swiss chard!


I had picked up a container of Kite Hill Cream Cheese the other day and wanted to try it in something to see how it turned out.


My thoughts were a creamy casserole, but that was all veggie pretty much. And not just plain old cauliflower mash, it needed something more. I love the color that swiss chard stems bring to a dish and they add some nice texture!



I started by steaming the cauliflower and mashing it with some olive oil, using the immersion blender.


While the cauliflower was cooking I sauteed up my swiss chard stems and garlic and then mixed all the ingredients together and placed in a small casserole dish.


Tossed it in the oven to bake and bring all the flavors together for about 20 minutes.


Delicious and cheesy!
