I've had some mashed cauliflower fails for sure. For example, Thanksgiving 2021, yep just last week. I committed to way too much that morning and was in a hurry and not thinking. I thought to myself, this will be way faster to steam the cauliflower rather than roasting it. Then I wanted to put fresh parsley in it, but I put it in too soon. So, we had watery, green mashed cauliflower. Happy St Patrick's Day...I mean, Thanksgiving. It just wasn't right, I struggled putting the gravy on it. I should've taken a picture of it.
Roast the cauliflower, or cook with very little water on low heat and drain it all out before mashing. No one wants runny mashed cauliflower. And, add fresh herbs after you're done blending. Other than that, pretty easy.
