I've been in the mood for soups lately, especially pureed ones for some reason.
Year's have passed since I made a butternut squash soup, it always seems too tedious to peel the squash. That is ridiculous, btw, it didn't take me anytime at all. I'm not going to let that keep me from making this for another 4 years, either. It's too delicious!
This has a little umami from the fish sauce and coconut amino's, along with a little spice from the cayenne! If you don't want spice, omit the cayenne, or cut it back. But, it sure helps warm you up!
Butternut squash is a great source of magnesium, pottasium, beta and alpha- carotene. Your body does need a little fat to absorb these though, so this soup is a perfect way to consume butternut squash and get the full benefits!
I love to serve it drizzled with olive oil, I also topped with some minced, fresh red peppers, but it would be great if they were sauteed or roasted as well!
