If eating brussels sprouts or collard greens on their own is a stretch for you, try combining them with this recipe and giving them a go!
The flavors pair nicely and the balsamic vinegar added at the end helps to really mellow the flavors out.

Be patient with yourself when trying to incorporate new foods into your diet! I think it helps to google health benefits of...whatever you are getting ready to eat. Read about the benefits and then eat it. Try doing this with a new food weekly, sampling different methods of preparation and recipes and before you know it you'll fall in love!!
Trust me, it works. I used to drink coffee with my cream and sugar. About 10 years ago I decided to eliminate the sugar from my coffee because I was starting to learn how bad it is for you. I slowly began decreasing the sugar in my coffee, and I didn't love it at first, but it takes time for your taste buds to adjust. I kept at it and I had been drinking my coffee with just cream for years.
When my nutritionist said I needed to eliminate all dairy from my diet 6 months ago I was miserable at first. I thoroughly enjoy the ritual of drinking my coffee every morning, going out to coffee with friends, etc. I tried all sorts of ways to do coffee that didn't involve cream and they were all just completely unsatisfying. It was time to just get used to drinking it black...It took about a month, but I can honestly say I now enjoy my coffee black and look forward to it every morning again! I'll occasionally allow myself a treat and put some heavy whipping cream in it, but that's rare lately.
Anyways, it's the same with food. I pretty much did the same thing with brussels sprouts about 8 years ago, and honestly, if they aren't prepared well, I still don't like them. Liver, I'm in the process still! I've concocted some recipes that I actually really enjoy, but to just eat liver and onions??? Um, no thanks. So, even though I'm not a huge fan of the flavor, my body has actually started to crave liver. If I go a week without eating any, I will start thinking about it a lot.
So, when trying to incorporate new foods go into with an open mind. They say you may need to try a new food up to 15 times before your palate becomes adjusted and starts to like it. Just keep trying!
