We have been eating lots of salads lately, trying to get our greens in! In an attempt to maintain interest I've been playing with different salad dressings.
Because I'm in ketosis and trying to stay there I can't do honey or maple syrup like I have in the past, so it's challenging.
Our go to dressing has always been a balsamic vinaigrette, but I haven't gotten even close to making it palatable with out some major sweetener, which I don 't really care for.
Here is a lovely dressing, that is best enjoyed the day you make it, it didn't hold up well in the fridge in my opinion.
It's fruity, slightly sweet with a little tang, a great way to use up berries that might be at the end of their life, but still taste good.
You can use any mix of berries you like, I used strawberries, blackberries and blueberries in this particular batch. Nothing says you have to use a mixture either, use just one type of berry if that's all you have!
Berries are on the low end of the carb spectrum for fruit, which make them great for most diets. Loaded with antioxidants and nutrients they are a great choice to add to your diet on a regular basis!
