Beanless Chili


Sadly, I'm not supposed to do beans any longer, and I LOVE beans. I've cheated once in the past 5ish months and had them at a Mexican restaurant in Houston and I enjoyed every second of them.


Anyways...I like the texture that beans bring to chili, so this is my first try at a beanless chili. I opted for brussels sprouts, carrots and zucchini because I had lots of those on hand, and it was pretty darn good!


I do feel like all the chili powder I've been getting the past year just isn't quite right, super bland and I have to start adding a bunch of other seasonings to get a decent flavor. I've bought new, thinking maybe mine was getting too old, even though that is difficult to do in my house because I usually go through it pretty fast. Still, thought I'd try that. Nope, same brand I always buy was meh. Tried a few other brands, all meh. Maybe it's me.


This chili comes together pretty quick, maybe a little over 30 minutes because you have to chop everything, but not much longer! Which I like.


Honestly, if I'd had any cauliflower I probably would've made a mash and eaten it on top of that.


Rodney likes his chili thick, but I like to add a little bone broth to mine to thin it out and make it a little more soupy, and it's just that many more nutrients you're adding to your meal!
