This recipe is yum! When it's cold outside I thoroughly enjoy soups, especially pureed ones, for whatever reason. There is also a deep appreciation for ones that are fast and simple. Also creamy, but don't taste like coconut milk...

One thing I will say is that the immersion blender did not work well for this soup, strings of asparagus got wrapped around it and it just didn't get things very smooth. Maybe it was because the asparagus wasn't very tender to start? Or maybe I could've cooked it a little longer, but I didn't want to overcook it.
I was traveling and had access to a Nutribullet where I was staying so I used that and it worked great. It still wasn't as smooth as what the Vitamix would've gotten it, but it worked great nonetheless and sometimes it's nice to have a little texture!
Serving Suggestions
Drizzle with high quality olive oil
Top with leeks, parsley or fresh basil
